This recipe for Asian Chicken is a Weight Watcher-friendly version of Asian BBQ Chicken on the Our Best Bites blog. I've substituted and changed a few ingredients, but it's still just as yummy!
6 packets of Splenda
1/4 cup of soy sauce
2 Tablespoons of Lemon Juice
1/4 teaspoon of curry powder
3 Tablespoons of minced garlic
1/2 teaspoon of ground ginger
8 boneless, skinless chicken breasts
Wisk together the first 6 ingredients in a bowl. Put chicken breasts in a large Ziploc bag or Ziploc container. Pour marinade over chicken breasts and seal. Let chicken marinate in the refrigerator for about 30 minutes (longer if you have extra time). Preheat your grill (indoor or outdoor) and cook the breasts (about 5-10 minutes on each side, depending on the thickness). Serve with s side of easy fried rice and some veggies for a delicious, *Weight Watcher-friendly dinner!
