Spaghetti Squash Adventure

According to last Thursday night's weekly weight-in I've officially lost my first 10 pounds using the Weight Watchers program! *Happy Dance!* Truth be told, I'm really surprised that I've stuck with the program long enough to reach the 10-pound milestone. What I thought may become another try-and-fail situation in my life has actually become part of my life. I'm almost nine weeks in to the program and I'm still motivated to move forward. I'm still excited about making better dietary choices because I'm reaping the benefits in other areas of my life as well.

This week my Mom and I experimented with a spaghetti squash. Neither of us had ever cooked or eaten spaghetti squash before so we really didn't know what we were in for. Has anyone ever tried to cut into one of those things?? They're tough! If my Dad hadn't been around to cut into it we may have had to choose another dinner option!

Anyway, my Dad did break though, and he went ahead and scraped the seeds and guts out while he was at it. Thanks, Dad!

Our next step was steaming it in the microwave. We steamed each half separately by placing each half "face down" in a microwave safe dish with a little water in it and microwaving it for 10 minutes. 

After letting it cool for a bit, we took a fork to it. It was amazing to see the strands form as we scraped.

We scraped till we got all the strands out.

My Mom made a pasta sauce and some meatballs to serve over the squash, and we served it with a side of broccoli.
This tasty dish was a total of 6 point plus values! The squash and broccoli were free, the sauce was 2 point plus values per 1/4 cup, and the meatball were 2 point plus values each. Not bad for a complete dinner!

My Mom, Dad, and I all agree that substituting spaghetti squash for pasta is a great exchange. The texture is a little bit different, but we hardly noticed a difference in taste. It may have been just a tad bit sweeter.
